Bailey's Irish Cream is probably the best known Irish
cream in the World. It is made from a mix of cream,
eggs, chocolate and Irish whiskey. Bailey's Irish Cream
can either be served straight, on the rocks or be used
as a mixer. A
mixed drink we make with Bailey's is called the
"Mudslide." Here is the recipe: 1 oz. Vodka,
1 oz. Kahlua and 1 oz. Bailey's Original Irish Cream.
Fill a mixing glass with ice. Add vodka, Kahlua and
Bailey's. Shake. Strain into a chilled cocktail glass
and enjoy. |

Spain is known for the "The Running of the Bulls" which
occurs in July every year in the city of Pamplona. |

The city of Pamplona,
Spain, was originally called Pompeiopolis, after Julius
Caesar’s rival Pompey, who founded it in 75 b.c. as a
military settlement during his campaign to put down a
revolt. Pamplona is the capital of the province of
Navarre in northeastern Spain. Repeatedly conquered
between the fifth and ninth centuries by Visigoths,
Franks, and Moors, the city in 824 a.d. became the
center of the Basque kingdom of Pamplona—later called
the Kingdom of Navarre.
As early as the eleventh
century, Pamplona was something of a “tourist” town. It
became, and still is, a stopover point for pilgrims on
their way to Santiago de Compostela, the Spanish city
where James, "the Beloved Disciple," is supposedly
buried.
What most people outside
of Spain know of Pamplona is that it is the site of the
famous “running of the bulls,” which Ernest Hemingway
made so famous in his novel “The Sun Also Rises” (1926).
The running of the bulls is actually a part of the
annual Fiesta de San Fermin (Festival of Saint Fermin),
which is held in honor of Pamplona’s first bishop, St.
Fermin. The celebration, which starts on July 6, the eve
of the actual festival, lasts until July 14. Daily
bullfights during the festival are preceded each morning
by the famous “encierro” (literally, “enclosing”) of the
bulls, the activity that is popularly known as the
running of the bulls.
The bulls are released
from a holding pen and driven through the narrow streets
of the city, behind crowds of men and boys, who dodge
them and try to outrace them to the bullring. In the
past, the men who ran with the bulls demonstrated their
bravery and their agility and skill in dodging the
fierce creatures. Now, however, the crowd in the streets
is grotesquely swelled by the huge numbers of foreign
tourists who want in on the action. So packed are the
narrow streets, that runners are scarcely able to move
or maneuver, and instead of skillfully dodging the
bulls, the runners often simply pile onto them and drag
them to the ground.

I-271 on Chargin Boulevard. To reach the restaurant from
downtown Cleveland, take I-77 south, I-480 east, I-271
north and exit at Chagrin Boulevard. Turn right on
Chagrin and travel about 1 mile east. We are situated
directly across the street from the Beachmont Country
Club in a colonial style brick building. You will see
the sign pictured above. Ample, free and safe parking is
always available right in front of Marbella. Our
entrance is just to your left when you enter the

meal, consider ordering a glass of Spain's famous wine.
When was the last time you
enjoyed a glass of Sherry? If you’re like many Clevelanders, you
may have never enjoyed the refreshing complexities of this
often-misunderstood classic wine from Southern Spain. Well,
allow us to give you a brief introduction and wet your
appetite.



Cadiz, located in the
ancient sun-drenched Southwestern coastal province of
Andalucia is the home of the “Sherry Triangle” – made up of
the three famous Sherry producing cities; Jerez de la
Fronterra, Santa Maria and Sanlucar de Barrameda. It’s here
that the hot, dry Mediterranean climate and the chalky soil
provide the perfect microclimate for the indigenous grape
variety, Palomino. Palomino constitutes about 90% of the grape
plantings with Pedro Ximenex (PX) and Muscatel rounding out
the allowed varieties in this historic Denominacion.
Sherry begins just like any other wine; the fermented Palomino
grape produces a dry, thin wine notoriously prone to
oxidation. But it’s here that the process becomes unique! The
fermented Palomino juice is classified by its individual
characteristics with the cleanest and most aromatic wine
separated to butts for Fino. The wine is then fortified with
grape alcohol before beginning its journey through the Solera
process. Each Bodega has stacks of American oak barrels or
butts arranged in criadera’s or cradles. The newest wine is
added to the top criadera along with the aging wine already
present. The wines are racked off to the lower levels as they
age, finally ending up in the bottom row or solera. Each
criadera represents a step in the aging process that develops
the wine in to a darker richer wine. It’s important to note
that as the new wines are added to the various levels of the
solera, the older wines train the newer wines providing
consistency and character. All Sherry is non-vintage,
consisting of the marriage of many different vintage years.
One of the key elements in producing dry, crisp Fino Sherry is
the “Velo de Flor” or natural yeast cap that forms inside the
fermenting barrel in the upper criaderas The flor prevents the
oxidation of the young wines as they age in the upper racks.
It’s from these upper racks that the driest Finos are
extracted and bottled. The higher alcohol content in the lower
racks inhibit the production of flor, resulting in controlled
oxidation. This slow gentle aging process is evaluated,
classified and at various levels of age and color, extracted
to produce the different styles of Sherry.
The different Sherry styles provide a range of dryness from
the younger crisp bone dry Fino to the sweet complex desert
wine, Pedro Ximenez - made from the grape of the same name.
It’s Pedro Ximenez and Muscatel that is added to the sweeter
styles near the end of the aging process that provide a dark
rich sweetness.
Let’s look at the basic styles of Sherry.
Fino
“The wine of Jerez” is Pale and straw-colored, light and
very dry, fino sherry is crisp, delicate and slightly pungent.
Its distinctive aroma, reminiscent of almonds, comes from the
flor yeast that grew on the surface of the wine during
development in the solera. Served chilled, fino is an
excellent aperitif or goes well with chilled seafood, olives,
spicy meats, sausages and salty snacks like potato chips,
pretzels or nuts.
Manzanilla
Another type of fino, is the palest, driest, and
lightest-bodied of all Sherries. It is only produced in the
Atlantic coastal town of Sanlucar de Barrameda. Tangy and
tart, this limited production is also a great aperitif and
goes with all the items listed above. Serve chilled.
Amontillado
A rich amber color this Sherry has a distinct pungent aroma
with a lingering nutty aftertaste. Medium dry and full bodied
with slightly higher alcohol content than fino, Amontillado is
a great accompaniment to Spanish cheese, smoked fish, roasted
red peppers and artichokes. Serve this wine chilled, at room
temperature or on the rocks.
Oloroso
This fragrant Sherry has a nutty bouquet reminiscent of
walnuts. Oloroso ranges from dark gold to amber and is softer
and mellower, with more body than Amontillados. Hints of
sweetness make this wine a perfect light desert wine when
served at cool room temperture.
Cream
The biggest seller in America, this rich smooth sweeter
wine is a blend of Oloroso and Pedro Ximenez or Moscatel. A
nose of dried fruit with nutty overtones, this is a rich
desert wine served at room temperature or on the rocks.
Pedro Ximenez
Made from the grape of the same name, this is desert in a
glass! Deep dark rich color with a sweet nose and long
lingering sweet finish. Try this aged wine with a blue veined
cheese, some toasted almonds or over vanilla ice cream.
Serve Sherry in a traditional Copita; a slender clear tulip
shaped glass that tapers inward to funnel the aromas to your
nose. A small wine glass will work as well. All Sherry is
ready to drink when bottled and doesn’t require further aging
or storing on its side. Fino should be refrigerated after
opening and enjoyed fresh, but due to the higher alcohol
content all others can be stored at room temperature and will
hold up well for a long time after opening.

with some traditional Spanish Tapas. We are particularly fond
of the Sherry produced by Osborne. They are readily available
in all varieties and at great prices.

Ernest Hemingway loved
Spain, its wines and bullfights.
Ernest Hemingway
absolutely cherished his time in Spain. Hemingway's
fascination with Spain and bullfighting, first reflected in
1926 in the novel The Sun Also Rises, was further developed in
the classic "Death in the Afternoon" and "The Dangerous
Summer."
When Hemingway
saw his first bullfight in Pamplona in 1923, he brought his
wife Hadley along because he hoped the event would have a
positive influence on the unborn son she then carried. The
sport certainly affected the budding writer. It became one of
the reigning passions of his life. Hemingway's trip to Spain
in the summer of 1925 would live forever in his novel "The Sun
Also Rises." Pictured below are Hemingway, left, sitting with

Johnnie Walker Blue Label
Character
Johnnie Walker Blue Label's intense and luxurious nature
recalls the authentic character and taste of the
pioneering 19th Century Walker blends. A toasty, sweet
aroma is complemented by a peaty and spicy taste that
develops into heady flavours of oak, dark-chocolate and
rich fruitcake. Comprising just 16 of the world's rarest
whiskies, Blue Label's appeal to true Scotch
connoisseurs rests on the blend's dominant Islay malt
whisky, balanced by several rich Speyside malts that
have undergone exceptional periods of sherry oak
maturation.
History
John Walker and his son Alexander began their earliest
blending experiments using a limited range of whiskies,
drawn mainly from the islands, the western and northern
Highlands and a few distilleries in Speyside. Once they
had rejected whiskies that didn't meet their standards,
they found that the very best were strictly limited in
supply. Following their lead, the Johnnie Walker
master-blender developed Blue Label as a celebration of
the founder's unremitting standards for only the highest
quality whisky.
Packaging
The label's blue-green bottle made of flint glass has
been faithfully recast from a 19th century Walker bottle
mold, and its rare contents are secured by a traditional
cork stopper rather than a screw cap. Each bottle is
individually numbered as a cast-iron guarantee of
authenticity and is cradled in a satin-lined
presentation box as befits a blend made up of some of
the world's rarest whiskies.
Claim to fame
As Blue Label is blended from some of the scarcest and
most expensive whiskies in the world, availability is
seriously limited. In 1993, a panel of international
experts at the International Wine and Spirit Competition
awarded Johnnie Walker Blue Label its most prestigious
medal, the Gold Medal for the Best Blended Whisky. |

Courvoisier VSOP Fine
Champagne
Rich combinations of blue and golden that play on
the amber shade of a Fine Champagne, both subtle and
light. Savour it neat, mixed with ice or as a long drink
with tonic . The Master Blender’s comment: Floral aromas
and notes of vanilla for this VSOP which is often
described as "tender, subtle and elegant". |

Courvoisier has often been
called the "Cognac
of Napoleon." Before establishing the
company in Jarnac, and as his father Emmanuel did before
him, Felix Courvoisier worked in close association with
the Gallois family, important wholesalers in wine and
spirits in Bercy. As loyal suppliers to the Imperial
Court, they had been honoured with Napoleon’s visit at
their warehouses in 1811.
Legend has it that Napoleon made sure to bring several
barrels of cognac on the ship which took him to St
Helen, a treat much appreciated by English officers who
named it "The Brandy of Napoleon".
The relations under the rule of Napoleon I lived on
through the Second Empire, as Napoleon III granted
Courvoisier the title of "official supplier to the
Imperial Court" in 1869. This certificate is now on
display at the Courvoisier museum in Jarnac, with many
other Napoleonic artifacts memorabilia such as his hat,
a redingote and even a lock of the Emperor’s hair. |

20th Century, Courvoisier created the Napoleon quality
that remains an absolute reference in cognacs. |

The most classical of our
Cognacs personifies tradition, elegance, maturity and
pleases the most discerning of gourmets. The Master
Blender’s comment: A subtle harmony of old port, prune,
and orange blossom. This voluptuous Fine Champagne
lingers in the mouth with great depth and length on the
palate. |
