Meet our Executive Chef and Co-Owner, Marcelo Fadul. Marcelo is a master of Spanish cuisine. He was born and raised in Brazil. He has worked as a Chef at 4 Diamond restaurants in Spain and New York City. Marcelo excepted our invitation to come to Cleveland in 2001 to become a partner and the Executive Chef at Marbella. Marcello splits his time between Marbella and Mallorca (downtown in the Warehouse District). Next time you are dining at Marbella, feel free to ask your server if you could meet Marcelo when he has a minute. He is always happy to visit the dining room to say "Ola".

Our Signature Dish is Paella Vallenciana!

Spain is famous for Paella and so are we. Clevelanders drive from near and far to dig into this steaming seafood dish. It is so enormous that couples often share this entree.

And if you dare to go it alone, chances are you will be having Paella for lunch the next day at home.

Chef Fadul really goes overboard when he makes Paella for you. Heaping portions of Saffron rice are tossed with shrimp, mussels, clams, scallops and fresh white fish.

It doesn't stop there. After the mounds of seafood are added, Marcelo then adds slices of zesty Chorizo sausage, bit size chunks of chicken breast, sliced red and green bell peppers and peas.

Jjust to be sure you don't go home hungry, he tops off our signature dish with a lobster. Are you getting hungry yet? We are, just talking about it.

Before we serve our Paella, we bring you a crisp tossed salad of mixed greens and tomatoes topped with our special Spanish dressing. This helps to get your digestive juices flowing before you ravish the Paella.

Oh, and by the way, when we proudly place the Paella in front of you, we also set down a medley of fresh vegetables that include broccoli, cauliflower, beans and carrots. It seems like most people go straight for the Paella though, and save the vegetables for last in case they have room left over.

Do you like shrimp? Our Executive Chef, Marcelo Fadul makes the most wonderful shrimp dishes. One of his favorites to prepare involves wrapping jumbo shrimp with a delicious slices of bacon.

The Brandy Sauce that accompanies this dish is amazing! The shrimp and bacon wraps are served over a generous portion of our homemade whipped potatoes. This entree (as all are) is served with a nice portion of fresh vegetables and a crisp tossed salad beforehand.

If you have never tried shrimp wrapped in bacon, stop by Marbella and give it a try. This dish is so tasty, you might be tempted to order a second one!

What a combination! A nice juicy tenderloin filet cooked to your exact specification served along side with a mouthwatering lobster tail.

Melted butter, mashed whipped potatoes, a medley of fresh vegetables and a tossed salad accompany this wondrous dish. It may be difficult to decide on white or red wine to go with this meal. What the heck, or a bottle of both and enjoy!

For those of you that really enjoy lobster, our dinner menu also features Twin Lobster Tails in a Champagne-Apple Sauce (Colas De Langosta En Salsa De Champan) and Broiled or Stuffed Twin Lobster Tails (Colas De Langosta A La Parrilla).

Cava: Spanish Champagne

Next time you are deciding on a bottle of wine, consider the two "Cavas" from Spain that we feature on our Sparkling Wine List. Freixenet Cordon Negro Spain and Segura Viudas Brut Heradad Reserva are both excellent values and they taste great too!

A toast, in Spain, is practically always drunk with cava, the Spanish sparkling wine made by the champagne method. This is especially true when the New Year is brought in with the twelve grapes swallowed with the chimes of the clock in the Puerta del Sol.

Cava, made by the Champagne method, is a very acceptable alternative to French champagne and, it should be said, much better value for money. Almost all cava is produced in Catalonia, especially the Penedés region, although eight different provinces are included in the production area.

Literary references show that wine with a certain amount of effervescence has been made in Catalonia since at least the fourteenth century. But it was not until the 1850s that serious attempts began to produce a wine with the same characteristics as champagne and production did not begin until the 1870s.

Since then, cava has become tremendously popular and vast amounts, over two hundred million bottles, are now made for both domestic consumption and export. The best-known makes, Codorniu and Freixenet, have been involved in a full-scale trade war for years.

Cava is not the only sparkling wine made in Spain and sometimes consumers are fooled into accepting something inferior. You can distinguish cava by the cork, which should be marked with a four-pointed star.

Our Spanish cuisine is prepared from the original recipes handed down over generations. We specialize in mouthwatering fresh seafood dishes and tender delicious steaks. Our signature seafood dish is called Paella Valenciana. Many of our guests comment that it is the best Paella they have ever tasted.

His experience as a Chef in Spain, Brazil and New York City has contributed to his authentic recipes and world class cooking techniques. Marcelo has the freshest seafood flown in and even keeps live lobsters in the restaurant ready for your dining pleasure.

He personally tastes everything on the menu to be absolutely certain that you enjoy the finest Spanish food available. The daily specials Marcelo designs are so good that many of our guests plead for them to be added to our regular menus.

One of his favorite ingredients is shrimp. Dishes that include shrimp in the preparation include our famous Paella Valenciana, Shrimp in a Garlic Sauce (Camarones En Salsa De Ajo), Shrimp Cocktail (Cocktail De Camarones), Jumbo Shrimp in a White Wine Sauce (Camarones Costa Del Sol) and Jumbo Shrimp Wrapped with Bacon in a Brandy Sauce (Camarones Mallorca).

Another crustacean that Marcelo enjoys using in our recipes are mussels. These are a crowd favorite as well. Our Paella is overloaded with mussels and shrimp too. Two appetizer dishes he prepares are the Mussels in a Green Sauce (Mejillones En Salsa Verde) and Mussels in a Fra-Diavolo Sauce (Mejillones En Salsa De Tomate Picante). One of our most popular entrees that features mussels is the Filet of Sole with Clams, Mussels & Shrimp in a Green Sauce (Filete De Lenguado A La Vasca).

Our menus offer something for everyone and every palette. We specialize in tender juicy steaks and the freshest seafood available. Before entrees are served you enjoy a crisp, fresh salad. When your entree arrives, so does a healthy medley of fresh vegetables. Entrees are often overwhelming is size. Portions at Marbella are incredible and are always boxed upon request.

Smiling people leaving Marbella with doggy bags is a common occurrence. Not that our servers eavesdrop, but they often overhear comments like "Oh my God, I am so stuffed." Make sure you come to our restaurant with a healthy appetite and be careful not to snack on the complimentary loaves of bread too much because your meal will astound you tongue and stomach.

Menu Overview

We serve lunch and dinner at Marbella. You can peruse both menus while you are visiting this web site. Many of our dishes are served by day and night. The menus begin with a choice of 3 soups: Gezpacho, Garlic and Vegetable. Appetizers follow and focus on fresh seafood like mussels, clams and shrimp. The entree list is extensive and so are our nightly specials which are tempting beyond belief. Your server will tempt your and your friends with a seemingly unending recital of seafood, poultry, wild game and beef specialties. One of these times, you should try the frog legs special. They really are good!

Fresh seafood dishes include lobster, salmon, sole and shrimp dishes. Our meat and poultry selections offer veal, chicken, steak and pork dishes. Special dietary requests are always welcomed. We can always hold your salad dressings and sauces or serve them on the side. If you want to pass on our Saffron rice and have extra vegetables, "no problemo."

Food in Spain:

Spanish food has a deservedly fantastic reputation, and tapas are probably one of the most civilized inventions since cold beer. Paella, gazpacho and chorizo may be familiar to most Western diners, but Spanish cuisine goes well beyond these, with a smorgasbord of rich stews, soups, beans, seafood and meats, all of which have been influential in Latin American cooking. Spain is a country that truly enjoys it's food. There's really no such thing as "typical" Spanish cooking. Food in Spain is as varied as its climate, cultures and geography. Most regional dishes are based on quality local ingredients and a relatively simple preparation.

The best known "tourist dish" is probably paella, a rice dish which comes from the Mediterranean area around Valencia. If you want genuine paella, you'll find it in Valencia, or (sometimes) in a specialty restaurant in Madrid or Barcelona. The typical tourist paella bears little (or no) resemblance to the real thing. In the big cities like Madrid and Barcelona, you'll find every type of regional cuisine and some great restaurants. Despite it's distance from the sea, Madrid (for example) has some of the best fish restaurants in all of Europe.

Maybe someday.

Man (and woman) can not live on bread, lobster, mussels, shrimp, scallops and calamari alone.

And this is why our menu also focuses on tender and juicy steaks. One of the best is the 20 oz. Strip Loin Steak topped with fresh wild mushrooms and enhanced so nicely with a delicious port wine sauce. Two of our most popular tenderloins include the broiled 16 oz. Filet Mignon and the Filet Medallions with Shrimp in a Marsala brandy sauce. Sautéed red and green peppers and Vidalia onions add even more zest to the beef medallions and shrimp.
