Authentic Spanish Recipes
Our Chef, Marcelo Fadul has been preparing Spanish
Cuisine for years. He started in Brazil and perfected
his culinary techniques in Spain and New York City. |

The history of Spanish
cuisine began with Phoenician, Greek, and Carthaginian
coastal settlements. Later the Romans, and more
importantly the Moors, brought with them elements of
their own cooking that lingered and blended with Spain's
culinary heritage. Imports from the New World included
the tomato, potato, sweet potato, vanilla, chocolate,
and many varieties of beans, zucchini, and the pepper
tribe. There are olives in profusion, vineyards and
citrus fruit. Spaniards are very fond of garlic; they
love all types of sweet and hot peppers and their
beloved jamon serrano -- cured ham. The golden spice
saffron enhances many Spanish foods, paella in
particular. Spain's most famous wine -- sherry, both dry
and sweet -- flavors entrees and desserts.
Cuisine in the Iberian Peninsula echoes the cooking of
the Middle East (honey and cumin) and that of the
Americas (dishes combining meat with chocolate). Yet,
essentially, it is family cooking, comparatively simple
to prepare and characterized by fresh ingredients.
Besides meat, poultry, game, and fish entrees, there are
a wealth of dishes featuring beans, rice, eggs,
vegetables, and savory pies that make a meal. Tapas --
small morsels or appetizers in great variety -- play a
role in meals throughout the day. |

Fun in Marbella, Spain
Marbella is known for it's world class golf courses. But
it is much more than a seaside golfing resort. |
|
 |
Marbella has been the
play-ground of the rich and famous since the early 50's
and since the inauguration of Puerto Banús in 1970,
Marbella became legendary on the international scene.
Yet, Marbella is also much more than this. When the city
was founded is uncertain, but when the Romans inhabited
the city before the birth of Christ, there had already
been Neolithic settings in the area and the Romans left
a town of considerable dimensions. The Muslims invaded
the city in the 8th century and the city castle stems
from their reign. They were finally expulsed in 1485
following the Spanish reconquista initiated by the
Catholic Kings, Fernando and Isabella, and Spain was on
the threshold of its long-lasting Golden Epoche and
subsequent reign as a colonial power, which symbolically
ended with their loss of Cuba in 1898.
Marbella was put on the map as an international jet set
resort with the arrival of Prince Alfonso von Hohenlohe
in 1946, purchasing the finca Santa Margarita, which he
later converted into an American-style resort hotel and
the prestigious and legendary Marbella Club opened in
1954. The Guadalmina golf course opened in 1959 leading
the way to the subsequent golf boom and the pioneering
real estate developer José Banús initated the works with
the residential area Nueva Andalucía in 1963, consisting
of villa urbanizations, residential complexes and its
very own bullring, along with the ever so famous leisure
port in 1970. A modern parallel to Banús's efforts and
touristic visions was the controversial mayor of
Marbella, Jesús Gil y Gil, who after his election in
1995 effected the 2nd boom in Marbella with construction
works characterized as "frantic," nevertheless, the
honor of having restored some of that faded glory from
Marbella's brilliant past has been attributed to him.
Marbella 2002 is a modern city with a large number of
quality restaurants, art galleries, glossy magazines,
night clubs and trendy cafés and bars, most of the in
names in haute-couture are present, so are the exclusive
car manufacturers and the chic interior designers. But
it is also a city that lives out its roots, with
traditional Andalusian customs and ways of life, its
rich gastronomy - and the sun. The feel-good-factor is
high in Marbella. |

When
friends get together at Marbella, they often share
pitchers of our delicious Sangria. From its humble roots
in Spain, Sangria has grown to become a popular,
refreshing party drink around the world. Every
restaurant has its own recipe (ours is secret) -
typically a mix of wine, brandy and fresh fruits, served
over ice.
Sangria is
a red wine punch, although it can also be made with
white wine - it is then known as 'Sangria Blanco'.
Sangria was originally created in Spain with Rioja and
other Spanish reds. Soon, however, the Cava-producing
area adopted a sparkling white version. In the south of
Spain Sangria is called zurra, and is created with peach
or nectarine. |

Sangria is typically
created from red wine, fruit juices, soda water, fruit
and sometimes brandy. When making your own Sangria, use
a good quality red wine, and be sure to let it chill
overnight. Use Rioja to get the authentic Spanish
flavor, but definitely choose something you like -
you're the one drinking it! In the morning, pour into a
pitcher full of ice cubes, garnish with fresh fruit, and
enjoy. |

Marbella is unique in many ways. No other restaurant in
Cleveland offers the same style of ambiance and cuisine.

That restaurant is Mallorca. Our Chef, Marcelo Fadul,
splits his time between Marbella and Mallorca. Regulars
at Mallorca will be delighted to see many of the same
dishes on our menu.

Marbella, Spain
Marbella is located in the
Spanish region of Andalucia on the Costa del Sol on the
South Coast. It's classy, it's glitzy and it simply
oozes coastal charisma. |

|
Modern day
Marbella is Spain's answer to St Tropez - a favored
haunt of the rich, the famous and the seriously star
struck. Now one of the Mediterranean's premier holiday
resorts, Marbella has a history stretching back many
thousands of years BC. The remains of prehistoric
settlers have been found on the Sierra Blanca which
provides Marbella's impressive mountainous backdrop;
recent archaeological finds point to Phoenician
settlements here in the 7th century BC.
This is an area steeped in history and you'll find
plenty of fascinating architecture and places of
interest dating back to the days of Roman and Moorish
occupation. But it's not Marbella's history which brings
foreign visitors in droves to this most favoured of
towns which has gained a worldwide reputation for its
glitz and glamour.
Probably the most famous area of the resort is its
seafront "Golden Mile" stretching from Marbella to the
luxury yacht spotters paradise at Puerto Banus. This
stretch is where Marbella's wealth is most in evidence -
Ferraris cruise the quayside, the seriously rich dine in
fabulous restaurants and lesser mortals pay an arm and a
leg to sip a glass of wine and people watch.
The port of Puerto Banus, to the west of the town, is
home to a collection of some of the swankiest yachts in
the world. Members of the paparazzi mingle with the
ordinary masses, all hoping for a glimpse of the stars
and mega millionaires whose floating palaces leave
quayside spectators gasping in awe.
You don't have to be Bill Gates to holiday here - but
expect to pay more for everything than you would in most
other Spanish resorts. There are world-class restaurants
offering top quality cordon bleu cuisine at top prices;
but you can still find plenty of back street Spanish
tapas bars and restaurants where you can enjoy excellent
home cooked fare at a fraction of US prices.
When the
almost obscene wealth on display at the seafront becomes
too much to bear, head into the charming old quarter and
explore the narrow streets with their jumble of bars,
bistros, shops and galleries.
The focal point of the Old Town, still partially
surrounded by the ruins of an old Arab wall, is the
lovely Orange Square with its ancient stately buildings,
tall trees and exotic tropical plants. |

The square dates back to
1485 and is dominated by three buildings of historic
interest - the Town Hall, built in 1956, the Baroque
style church of St Mary built in 1618 and restored after
the Spanish Civil War of 1936, and the old Governor's
House dating back to 1552.
As for entertainment, Marbella has it all. There are
parks and gardens to relax in, every water sport
imaginable, golf, horse riding, hiking…
And when the sun goes down…prepare to party! There are
clubs, casinos, discos and cinemas enough to keep you
entertained till dawn. |

Having received numerous awards, including Best New
Restaurant, Mallorca offers outstanding service and
incomparable menu selections. Daily specials showcase
the freshest seafood available.
Repeat clientele bear witness that generous portions,
ample parking, and an extensive wine and spirit
selection are the formula for a successful restaurant.
We invite you to come and enjoy the atmosphere of
Pittsburgh's most unique dining experience.
A typical evening at South Side's Mallorca Restaurant is
noisy and busy, with a dark-eyed, dark-haired wait staff
fawning over your every need and charming the senoras in
the party with their lilting accents. The ethnic quality
of this Spanish restaurant goes beyond a few menu items
and decorative paint job.
Patrons not quick enough to make early reservations
might end up in the front room, where the long wooden
bar doubles as a leaning post for patrons waiting for
tables. Mallorca seats 85 patrons during winter months
(outdoor dining is available in summer).
The sea-green back dining room is usually filled
with people who laugh and chat while busboys and waiters
rush about with sizzling trays, naming specialties and
hefting
armloads of covered dishes. Tables are crowded with
shared platters of salad, round loaves of bread and
large side dishes of homemade potato chips, fresh mixed
vegetables and rice that accompany the entrees.
So maybe such a buzzing restaurant might not be the spot
for a romantic dinner date, but it's a great place for a
friendly gathering of fun-loving people. And the food is
pretty darn good, too. Mallorca's mix of Spanish
and continental cuisine is a welcome surprise for
Pittsburgh palates tired of steak and limp pasta.
English translations under the Spanish dishes welcome
the uninitiated to the delectable mysteries of clams in
green sauce, garlic soup, paella and much more.
The team service by the
efficient cadre of waiters keeps the kitchen door
swinging. But once the food is on the table, they pull
the European trick of all but ignoring you. The standard
custom in most European countries is not to serve the
check like an edict to vacate, but to wait until the
diner requests it. This is true at Mallorca. After your
check arrives, two complimentary glasses of almond
liqueur are served.
